I'm gonna be helping my mom make some perogies today for Christmas Eve dinner (And tomorrow I'm gonna be failing with a Turkey again… just like Thanksgiving. << let's just hope mom and I don't turn it purple again lol)

Mmkay, so normally my dessert specialty is tiramisu (b/c tiramisu = FOOD OF THE GODS), BUT this Valentine's day I have plans to make a chocolate ganache tart with strawberries. I'll let you all know how that goes (and post pictures too, hopefully!) XD

The best recipe that I can offer is one of the simplest ones that I know!

Tea biscuits!

• 2 cups all-purpose flour
• 4 teaspoons baking powder
• 1/2 teaspoon salt
• 3/4 cup shortening
• 3/4 cup milk
• Optional:
  Cinnamon & Sugar!

Note:
This recipe is a 'less salty' version than what some people prepare, the only reason for this is because 1 teaspoon seems to make the biscuits taste as salty as the ocean! Not a pleasant experience to eat. Blech!

But anyway- what time is it?

Direction time!

• Preheat oven to 400 degrees F (205 degrees C).
  
• Grease a baking sheet, it's okay to use your hands for this, and margarine/butter, whatever!
  
• Combine flour, baking powder, and salt. Cut shortening in with a butter knife until mixture has a fine crumb texture. Stir in milk with a fork to make a soft dough.
  
• Knead 8 to 10 times, using flour to make sure it doesn't stick to your counter! and then roll out to a thickness of at least 1/2 inch (but if you prepare more dough, then it's okay to have it thicker! Makes the insides nice and fluffy... Mmmmm...) Cut into rounds with a cookie or biscuit cutter, (I use a regular drinking glass for this.) Place on cookie sheet, and allow to rest for a few minutes.
  
• Optional step: you can sprinkle cinnamon and sugar on top of the biscuits, it tastes amazing with the butter that you spread onto the biscuits afterwards!
  
• Bake for 12 to 15 minutes. Serve warm.

Here, everyone! Have my Lemon parfait recipe!

You will need:
Four lemons
three eggs
caster sugar (about 110-->120g is what I usually use)
Cream! Single/double/whipping cream works great!! (Use one regular tub!)



Okay, let's get started!!

STEP ONE!

Get your lemons and zest them, put the zest aside. NOW....Squeeze their juice into a glass. Tip this glass into a bowl and add caster sugar and your three eggs. Add a TINY bit of lemon zest, you can throw the rest away now. Now stir it (or whisk with an electric whisk if you have one) until it's all dissolved. Now add the cream! Now you have to whisk it like a maniac for about 5--->8 minutes straight until it is all well blended. Turn the heat to the lowest and continue to stir until the mixture doubles in volume (you'll have twice as much) THEN TAKE IT OFF THE HEAT! TURN THE HEAT OFF! Okay!
Now, hopefully you have some pretty little small circular moulds. Like this:

No? Okay! Well, there's this company called "Gu" that do little cakes and things and you can eat the cake then use their dishes:

Or, you can use drinking glasses!

Put the parfait into the glass/mold/whatever and then cover with clingfilm.

Now put it in the freezer for an hour to eight hours. I've done it for three and it's still been fine. It will go into a jelly like substance, quite stogy.

Step TWO!!

You will need: Digestive biscuits if you like them. You could also use sugar cookies, any type of nice biscuits! I really like to use chocolate leibniz.

Now, get a bowl and crush your biscuits up a little. Only a little! You want to make it like a cheese cake base. Set this aside.


STEP THREE!!
You will need: A piece of fruit (Banana, Kiwi, strawberry)
Squirty cream (the stuff you get in bottles and you push a button and it comes out nicely whipped!)

When your parfait is ready, take away the clingfilm and sprinkle the crushed biscuits on it. Now, Squirt a small dab of cream ontop. After this...add a small slice of fruit to garnish (Strawberry's are super nice!)

You can also sprinkle fake glitter in the cream or hundreds and thousands.

Make sure that you do the cream part a few minutes before it's going to be eaten otherwise the cream will go flat ^^ Cream desserts always do, and it's only squrity cream, it takes a few seconds so long as you are prepared!!
